It would not be Christmas if there was no gingerbread! gingerbread is My favourite Christmas treat. I love the warmth it gives and it just makes me feel super festive and cosy. I love dunking gingerbread in milk to make it soft, its the best evening treat!
For today’s blogmas post, I thought i would share with you my easy no fuss gingerbread making recipe, but first I though we could have a giggle! Originally this post was planned to be a festive chocolate brownie recipe. I spent the morning making this already for cutsie blog photos, and they turned out to be a MASSIVE flop!
EXPECTATIONS VS REALITY……
So Now we have all had a giggle at my massive fail, I am going to share this super easy gingerbread recipe, that even I can do!
- 350g/12oz plain flour, plus extra for rolling out
- 1 tsp bicarbonate of soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 125g/4½oz butter
- 175g/6oz light soft brown sugar
- 1 free-range egg
- 4 tbsp golden syrup
Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar.
Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes.
Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper.
Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.
Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.
I loved how easy this recipe was, I would just say though if your like me and prefer a more soft gingerbread man cook it for the 12 minutes and they will be perfecto! I didn’t have any gingerbread cutter so i just used a circle cutter and used icing to decorate, I am sure you are all more artistic than me so would be able to decorate this ALOT better than me, but hay they taste scrummy so I am a happy little elf.
